The temps are still cold outside, but this dish will have you warm, cozy and closing your eyes with each bite! Lasagna Soup is an easy and simple recipe that does not skimp on taste.

Great for all differing tastes and preferences! Why? This is because it has a little something in it for everyone. This hybrid mix of Italian goodness and delectable winter soup is perfection for date night in or the whole family.

Furthermore, this recipe is great for newbies or those who are not the “strongest” in the kitchen. Not all of us can be 5 star chefs, but this soup helps you make till you make it! It is very flavorful, with each bite being as savory as the one before it or after.

Moreover, while this awesome soup is not a quickie 30 minute meal, you will still be finished under an hour! We clocked it and the average timeframe ranges from 40-50 minutes tops. And that includes prep time!

Therefore, if you are an extremely busy person, but want something hearty to eat, this is the dish for you! Also, if you absolutely LOVE lasagna you will wonder and be slightly upset; as to why you never tried it in soup form from years ago! This recipe is the luxurious, homemade Chef Boryardee for adults. And it does NOT disappoint!

To make Lasagna soup you will need the following:

INGREDIENTS

  • 1/2 pound lean ground beef
  • 1/2 pound ground Italian sausage
  • salt as well as freshly ground ground pepper to taste
  • 1 yellow onion , chopped
  • 1 Tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 Tablespoons tomato paste
  • 1 jar of marinara sauce (24 ounce marinara sauce)
  • 1/4 teaspoon red pepper flakes
  • 2 teaspoons dried parsley , chopped (or 2 tsp dried)
  • 1/2 teaspoon dried oregano leaves 
  • 1 teaspoons dried basil 
  • 7 cups sodium chicken broth (or vegetable broth)
  • 9 lasagna noodles, broken into pieces
  • 2 cups fresh spinach leaves (optional/ often will skip this ingredient)
  • 10 ounces ricotta cheese (or cottage cheese)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese (soooo tasty lol)

Got your ingredients all ready to go? Great! Let’s put it all together so you can enjoy your delicious soup!

INSTRUCTIONS:

  • Pull out a large pot and over medium-high heat, brown the sausage as well as ground beef. As you are cooking the meat; season them with salt and pepper for flavor. Once browned, please drain the grease (we know it’s a soup but do not leave the grease); and remove meat from the pot.
  • Moving on… in a large pot heat olive oil over medium heat. Next, sauté the diced onion for about 5 minutes, stirring occasionally. Add in the minced garlic and cook for another minute or two.
  • Now it’s time to make things “soupy!” Stir in your tomato paste, marinara sauce, spices, and chicken or vegetable broth. Also, return browned meat to pot.
  • Bring everything to boil in the pot; then add the lasagna noodles (broken into 4ths) to pot and reduce heat to medium-low and cook. While cooking, continue to stir occasionally, until noodles
    are nice and tender.  Add spinach, if using.
  • Now… let’s get cheesy!! Take out a small bowl, then stir together the mozzarella, Parmesan and ricotta cheeses
  • Scoop the hot soup into your serving bowls, and add a generous scoop of the cheese mixture on top. Garnish with fresh basil to finish off the dish. Bon appétit!

After cooking place soup or leftovers in freezer safe containers and freeze. It should stay ready for a quick thaw meal for up to 2 months. When ready to eat, place in refrigerator to initially thaw out; then reheat soup slowly over the stove.
