It’s summertime so that means the grills are out and the smoked meats are plentiful. However, just because you have a grill doesn’t make you a grill master. Some of the trickiest meats to grill are ribs, whether short, spare or baby back.

Before tossing the ribs on the grill it is important to parboil the meat first. Parboiling the ribs for about 20 minutes will soften the meat making them nice and tender once you put them on the grill to finish cooking them.

It’s best to use a charcoal grill if possible. When the ribs are on the grill never put them over direct heat. Instead keep the charcoal to one side and the ribs on the other side of the grill so that they are cooked by indirect heat. It’s also a good idea to wrap your ribs in foil before putting them on the grill. This will keep in the spices that you have seasoned them with and will keep them moist.

There are several secrets to making great ribs but following these basic tips should help you on your way.
